1. Glimpse breathtaking waterfalls

New South Wales’ cool-climate region is brimming with beautiful chardonnays, sauvignon blancs, rieslings, pinot gris, pinot noirs, merlots and cabernet sauvignons. In fact, the South Coast and Southern Highlands regions are home to no less than 20 cellar doors ready to treat you to fantastic wines, delicious gourmet meals and spectacular views of sprawling vines.

Two in particular to add to your list are Centennial Vineyards in Bowral, where you can treat yourself to a tasting, an Italian cooking class, a tipsy painting session, a stunning winery walk or a relaxed lunch in their restaurant. The other is Cupitt’s Estate in Ulladulla where there is quite literally something for everyone, including a family-run boutique winery, cellar door, restaurant, bar, microbrewery and fromagerie.

3. Bathe in blissful beauty spas

Taking in spectacular waterfalls and sampling divine local drops can be tiring work, which is why a wellness spa is the perfect end to a delicious day. Sudden Echo Day Spa in Nelligen is one relaxing place you can lay your weary (and well exfoliated) head for some indulgent facial and body treatments, including a therapeutic spa, quiet sauna, relaxing massage, herbal tea or rejuvenating break wrapped in a mineral clay cocoon.

Regions like the New South Wales South Coast and Southern Highlands are ripe with exquisite local produce, and there is a rich bounty of gourmet eateries plotted throughout that showcase the very best on offer. One restaurant that does local flavours justice is Small Town Food + Wine in Milton on the South Coast. This neighbourhood bistro boasts the likes of fresh Rocky Point oysters; prawn, scallop and chicken skin dumplings; and yuzu sorbet with plum, sake and rice custard, as well as a selection of tantalising aperitifs.
